Root Beer Float Pie

I can't believe we are already going into November. My baby is going to be 3 on Sunday, time is going by so fast. When I think about November I think about my daughter's birthday, pie, type 1 diabetes awareness month, and family. I can't wait for Thanksgiving this year because it's going to be our biggest one yet. I am trying out new pies to see which one I want to make for Thanksgiving besides the Oreo Cheesecake. This week I made Root beer float pie and it was delicious.

 Ingredients: 
1 Graham Cracker Pie Crust
2 cups of Vanilla Ice Cream
1/2 cup of sugar
4 tsp of Root Beer Concentrate (Baking isle in Walmart)
1/2 can of  Root Beer 
2 8oz containers of Cool Whip 
( This made two pies for me so for one pie I would use 1 container of cool whip) 

Directions:
Mix together ice cream, sugar, root beer, and root beer concentrate. Then pour both container's of cool whip and mix very well. Then pour the mixture into the pie crust. Place in the freezer for 4 hours. I usually take it out a half an hr before eating it so it is slightly melted.

What's Been Going On?

Hey Everyone I know it's been awhile but like always things have been crazy. We took a vacation to New Jersey for the first time with the kids and they LOVED it. We are now getting ready to move once again and so close to school starting. Mariah will be in 1st grade this year and she is turning 7 in a few weeks.  Then we have our anniversary coming up also. September is always the start of our busy time birthdays, anniversaries, and then the holidays. I hope to get back in the swing of things again :) Exciting things are happening.

Chili Cheese Dog Casserole

Today is Monday and I am exhausted. Saturday I got my hair colored for the first time ever. After that I took my 6 year old dress shopping for the Daddy Daughter Dance coming up this Saturday and Sunday we went to both my nieces birthday party which was Frozen. So all weekend we have been running around. I wanted to go easy tonight and get these girls to bed because we all need sleep.


Ingredients:
2 (15 oz) cans chili ( I didn't use beans)
1 (16 oz)  hot dogs
10 (8 inch) flour tortillas 
1 (8 oz) package Cheddar cheese, shredded


What You'll Need:
9x13 baking dish
  
Directions:

Preheat oven to 425 degrees
Pour one can of chili in the baking dish. Then roll up the hot dogs inside the tortillas and put them in the baking dish. After that pour your second can of chili on top and then top with cheese. We like the Cracker Barrel cheddar cheese better so I with shred a block and then place on top. Yummy. Cover with foil and bake for 30 minutes and you're done.




Fast easy and yummy what more could you want. It was a win for my husband too who is a picky eater. He doesn't like beans, pork, peppers, onions and probably more I can't remember. Here are some pictures of our weekend.

Crockpot Broccoli and Cheese Chicken

Brrrrrr today is cold. This morning when we woke up it was 30. I know I know you people in the north are probably saying suck it up buttercup it's 1 here. We are just not use to the cold here. It was so cold here we didn't have water this morning. Today is also Friday which means Girl Scouts for us so I decided to make Broccoli and Cheese Chicken in the crockpot. It already sounds warm. I can't wait to get started.

Ingredients:
4 Boneless Chicken Breast thawed
1 cup of sharp cheddar shredded
1/2 cup of sour cream
1 can of Campbells Broccoli and Cheese Soup (10 1/2oz)
1 bag of Frozen Chopped Broccoli (10oz)

What You'll Need:
Crockpot
  
Directions:
We start off by cooking the chicken on high for 3 hours covered
Then drain the juices after 3 hours
Next mix the soup, sour cream, and shredded cheese together and pour the mixture over the chicken.
Top the chicken with the broccoli and cook on high for 1 more hour.






After a long day today it was a great dinner. Now I just want to cuddle up and go to sleep.

Valentine's Day Conversation Heart Cheesecakes

So this Valentine's I wanted to surprise Brian again with a little dessert. Last year I made homemade sugar cookies with royal icing from scratch. I was also ready to pop (33 weeks pregnant). I remember making them and being on my feet all day it was rough but I like doing surprises for my husband. This year I made cheesecake. I was nervous because I never made cheesecake before. The day before Valentine's I made them then finished them off right before we left to go deliver them.

What You Will Need: 
Stand mixer
Roasting pan
Fine tip paint brush for food only

Ingredients:
3 large eggs
1 cup of sugar
1/2 a stick of melted butter
16oz (2 blocks of cream cheese) softened
1 cup of graham crackers
A pinch of cinnamon (I didn't use any)
1 tsp of vanilla extract
1 pint 16oz sour cream
Food coloring I used- Neon pink, purple, orange, and yellow and blue from the original box

Directions:
Preheat the oven to 325°F.
Then I put the graham crackers in my little chopper and mixed in the melted butter. This is where you can add the cinnamon I chose not to because my husband is allergic. After it looks like sand I put a little bit in each mold and then popped them in the fridge until I was ready to pour the filling in them. While they're in the fridge I added the cream cheese to the bowl of the stand mixer. Beat until nice and smooth and scrape the sides. While it's mixing you can put water in a pot to boil to fill the roasting pan for the cheesecake water bath (you only need enough to pour half way up the heart mold). Then add the sugar mixing for about a minute and then add the eggs until nice and creamy.  Add the sour cream and vanilla until it's combined. I then took 6 bowls and filled them with the filling. I started to add a little food coloring and gradually put more and more to get the color just right. I used 2 silicone molds 12 little cheesecakes. I made 3 colors and then poured them in the mold, poured the boiling water in half way up the sides and put them in the oven for 22-25 minutes. If your hearts are filled then I would bake them for 26-28 minutes. While they are baking I made the other 3 colors while I boiled a little more water for the second batch.
  Once they are out of the oven they need to cool at room temperature for about an hour.
Once that's done I put them in the freezer over night and kept my husband out of there because this was his surprise. 
  The day after I popped the hearts out of the molds and started to write on them.
  1. I did not have a fine paint brush I used another one so it came out a little wonky. (I need some practice)
  2. As I was writing my kids discovered them and was bumping the table asking when they were going to get theirs and screaming so I was concentrating on not spelling them wrong because I have mom brain. I forget everything  I have no brain cells left. 
I hope you enjoy your cheesecakes because I never even got a bite. As I pulled out of my husbands work I was getting texts saying they were awesome which made me so happy. Plus like I said I have never made cheesecake before so I was kind of nervous but they turned out great.

S'mores Dip

HEAVEN!!!!!!!!!

So my husband bought me a cast iron skillet and a cast iron pan that I can grill on. I have been asking for this for a few months so I was excited to break it in. My first recipe I wanted to try was S'mores Dip. This recipe was AMAZING!! My husband was at the store when I called him and asked for chocolate chips and he knew I was planning on making them. When he got home he did not play around he bought the Ghiradelli chocolate chips and they were richer so I could only eat a little at a time but it was awesome. These were a favorite the kids did not pass go or collect 200 dollars they dove in, marshmallow all over their faces chocolate oozing all over the place. We were all in heaven so let's get to it.


Ingredients:
1 1/2 cup of chocolate chips (milk chocolate or semi sweet)
Jumbo Marshmallows 1 bag is fine
Graham cracker squares

What You'll Need:
Cast Iron Skillet
 
Directions:
First preheat the oven for 450°F. Then I poured the chocolate chips in the skillet. I covered the bottom so you can't see the skillet. Then I placed the marshmallows on top. Bake for 7-9 until the marshmallows are golden brown. Then take out and enjoy. Delicious
 
You can cut the marshmallows in half if you don't want that much but we love marshmallows.

What a Month

Wow this month was craziness. We did so much and my husband only has Sunday's off so when we have plans we cram everything into one day. We took the kids to see the Christmas lights which they 
had a million lights set up. We got to drive through it while Christmas music played it was so much fun. We took them to see Santa, they got to bake and decorate sugar cookies and made reindeer food. As you can tell my my children's face they love making cookies and reindeer food. Here is what you will need to make your own reindeer food.

What You Will Need: 
Sandwich bags
Oats
Glitter

Directions:
So easy you pour a little bit of oats into the sandwich bags and then pour a little glitter and SHAKE! SHAKE! SHAKE! That's the girls favorite part. When we're all done just pour it outside. If you live up north like I did we poured it into the snow and the next day it was gone. Now we live in Florida so we poured this on our lawn in our shorts and it was there the next day. Good thing we go visit family Christmas Day so they forget all about it.  
We went to my parents house on Christmas for dinner and the year before they introduced us to different kinds of waffles. My mom bought me an Amazon gift card for Christmas and by the end of the night my husband told me I should get a waffle iron with it. Apparently he was a fan. So here is another great recipe.

What You Will Need: 
Chocolate cake mix (follow the directions on the box)
3 eggs
Canola Oil
Toppings (whatever you may like)

Directions:
Follow the directions on the cake box. You can choose any cake mix you like we did Devil's Food cake, the next one I want to try is red velvet. Once you have the batter the way you want pour it in the waffle iron. Once it's done we put ice cream, whip cream, chocolate syrup, and strawberries on it. Have fun with it and let me know what you come up with.





Chloe's 2nd Birthday

Chloe's 2nd Birthday!!

So this year my little princess was big into Sophia the First. She was Sophia for Halloween and loved the little dress and the tiara. We ordered a bounce house because the kids love it every year. We went simple for her birthday hamburgers, hot dogs, tuna macaroni salad. We did break out the beverage dispenser and made purple punch and lemonade. We made the purple punch by adding 2 (2) liters of Sprite Zero and 2 packets of grape Kool Aid and Viola Princess Punch. It was good a big hit for the kids. Now that I am planning Brooke's first birthday I have a lot of ideas so I can't wait.

September 2014

Mariah's 6th Birthday and Our 2 year Anniversary

Mariah had a small birthday this year just with family. After my shopping trip to Lush Mariah really liked the bath bombs after I gave her the bath bot with Lavender to help get the girls ready for bed after bath time. So I went to Downtown Disney and bought her some Mickey Mouse bath bombs and some jewelry for her birthday and she really loved them. Then we had some Neon Hot Pink Cake so very girly. A few days after her birthday is our anniversary so we decided to go to St. Augustine for the weekend. We had such a great time we got to relax, sleep, explore, and eat some yummy food. We climbed a lighthouse (what in the what were we thinking) our legs burned a week later. We ate at a nice seafood restaurant and got to have an adult conversation because we barely have that with 3 young ones around. It was nice and we enjoyed it. A week after our anniversary it's my parents anniversary so we went to Daytona the next weekend. Two years in a row they have gone to Daytona and we will go for the day and go out to dinner with them. Although this year they got an RV so I don't think they are going to Daytona this year. No matter what happens we always have fun.



MOSI

Back in July we visited the MOSI museum of Science in Tampa Fl. It was the first time the girls have ever been to a science museum. They learned about the weather, airplanes, the body, and more. They got to go into an airplane simulator, go in a wind simulator, learn how to broadcast on T.V, and move a ball with their brain waves. Then they got to run around and play some games ex. go through a web of rope but their wrist is connected to one rope so they need to figure out how to get to the other side. They had a pretend restaurant and grocery store for the girls to explore. It was a blast they learned so much and I can't wait to come back.








Playing Catch Up

I have been gone for a really long time almost a year. I have been doing so much that it's pretty hard. So I am going to keep posting to catch up with what I have done, made, baked, cooked and more. It's been fun but hectic. Mariah is in Kindergarten now and in Girl Scouts so right now is cookie madness. If you want to order from her just let me know and I can give you a link. Chloe is 2 now and super super smart. She amazes me everyday with what she says or does she's so funny. Then there is Brooke she is into everything these days she is going to be 1 in 3 weeks. She is crawling almost walking but not quite there yet. She is always smiling or laughing she is the happiest baby I have ever seen. On top of that we have been non stop we had Mariah's birthday, Our 2 year anniversary, Chloe's birthday, Thanksgiving, Christmas, More birthday parties, Family visiting, Florida State Fair, Valentine's Day (which I need to post my Valentine's dessert), cookie booths, Strawberry Festival, Daddy Daughter dance, and Brooke'e birthday. So yeah we've been a little busy. Friday nights is Girl Scout meetings so that means Friday nights are crock pot nights I have so many recipes that I will post.
